rename is an option but it depends

It kind of depends on how your current users and the accounts are setup. The display name comes from the account (person doc and user id being used) associated with the email (this is true for both external but also internal mail). If right now your user has a person doc with name Accounts and internet address set to accounts@company.com you can do a rename. Rename the person doc from Accounts to John.
Once the rename is completed the user id and person doc will now reflect the new name. The location doc of the Notes client will also be updated with the new internet address so that when the user sends an email out, the new address will be used. I would also add the old internet address (accounts@company.com to the bottom of the username field in the person doc. so that emails still sent to the old address are still delivered).
